Herbes de Provence Roasted Asparagus
Makes 4 Servings

1 bunch of fresh asparagus, trimmed
2 TBSP canola oil
1 TBSP Herbes de Provence
Sea salt and pepper to taste

Preheat a BBQ or oven to 400 degrees. Line a baking sheet with aluminum foil.

Toss asparagus together with all other ingredients. Spread on foil in a single layer.

Roast until tender and slightly brown – about 10-12 minutes.

Parisian Vinaigrette

Parisian Vinaigrette
Makes 1 cup of vinaigrette

3/4 cup olive oil
1 TBSP Dijon mustard
1/4 cup white wine vinegar
2 TBSP Fines Herbs blend
Sea salt
Tellicherry black peppercorns – cracked

In a jar with a lid that seals tight, mix olive oil, Dijon mustard, white wine vinegar, fines herbs and a pinch of salt and pepper. Screw the lid on tight and shake to bring the ingredients together.

Taste, and adjust seasoning as you see fit. Serve over a salad of mixed greens and toppings of your choosing.
