Spiced Cauliflower Soup

Spiced Cauliflower Soup

1 TBSP Oil
1 medium onion, diced
1 bay leaf
1 1/4 tsp cumin
1 tsp salt
1 tsp turmeric
1/2 tsp coriander, ground
1/8 tsp cardamom, ground
black pepper
red chilli flakes
3 minced garlic cloves
4 1/2 cup veggie broth
1 cauliflower
1 can coconut milk
1 TBSP cider vinegar
fresh dill for garnish
Heat oil over medium low in a large pot. Add spices and onion and saute until translucent – about 5 minutes.

Add garlic, cauliflower and broth and bring to a boil. Reduce heat to a simmer and cook until cauliflower is tender. About 20 minutes.

Once tender, remove bay leaf and blend into a creamy soup. Add coconut milk, vinegar and season to taste. Garnish with dill.
