3 TBSP cooked quinoa
1 medium tomato, diced, drained
2 spring onions, finely sliced
1 bunch parsley
1 bunch mint, no stems
1/4 tsp cinnamon
1/4 tsp ground all spice
1/8 tsp ground black pepper
1 clove
salt to taste
1 lemon, juiced
2/3 cup olive oil

Cut the herbs into very fine strips. Add to a bowl with quinoa, tomato, onions. Sprinkle with spices and salt. Mix together well.

Drizzle with lemon and olive oil. Mix and serve!
