Garam masala is used as a base in many Indian dishes, both traditional and non traditional, to bring flavour and warmth. In fact, the name Garam Masala literally translates to "warm spice blend."
CULINARY USES
This essential Indian spice blend differs from region to region and with personal taste. None is considered more authentic than the others, but all have the same general taste characteristics. Use as an all-purpose blend in Indian cooking, in seasoning dishes from lamb, goat and pork to fresh fish to potato and vegetable dishes. Often it is sprinkled on the top of dishes towards the end of the cooking process to preserve its special flavor.
