Jamaican Jerk Seasoning - Mild, Medium and Spicy
Jerk refers to a traditional Jamaican way of seasoning and cooking meat, fish, vegetables or fruit.
Traditionally, the jerk seasoning is used in making the Jerk Marinade. After the item has been marinated, it is slow roasted over a fire of pimento (allspice) branches. If you are pressed for time, or lacking in pimento branches for a fire pit, the mix is just as nice sprinkled over seafood, meats, veggies or poultry before grilling. Try mixing it into ground chicken for a flavourful jerk chicken burger or meatloaf.
