Thai cuisine centers around lightly prepared dishes with strong aromatics and a slight spicy edge. Often times meals are served with a caddy of flavour enhancers with items of each of the five tastes: sour, sweet, salty, bitter, and spicy; so that each dish can be individualized.
Southern Thai cuisine tends to be much hotter than Thai food from other regions and is heavily influenced by flavours and spices used in Indonesia and Malaysia, it is known for its sharp and intense taste. Heat is not the only prominent flavor of southern Thai food. Dishes are marked by a natural abundance of herbs, local provisions of coconut cream and the ever present rich spice blends of turmeric, galangal, garlic, lemongrass and kaffir lime leaves.
Try this hand mixed blend of cumin, pepper, lemon peel, garlic, ginger, mint, chili flake, paprika, lemon grass and lemon myrtle; on chicken, pork, fish, soup and roast vegetables.
